The other day I was craving fajitas but I don’t eat a lot of meat so I decided to make a completely vegetarian fajita. I ended up adding a bunch of other fruits and veggies and the fajita turned into more of a veggie wrap but it still tasted really good! With all the added veggies these wraps are extremely colourfull and super nutritious which is perfect for a healthy lunch. They are also easy to make. 3 Ingredient Pancakes
- Place 1 banana, 1 egg and 1/4 cup of oats in a blender.
- Blend on high for 20-30 seconds until smooth.
- Add a handfull of chocolate chips if desired.
- Heat a pan on medium heat and coat with olive oil.
- Scoop 1/4 cup of batter onto the pan.
- Cook pancake for 30 sexonds and then flip and cook for another 40 seconds.
- Repeat with remaining batter (makes 4 pancakes).

This is the perfect dish for those days when you are craving a warm meal. It is also a great idea to make if you have leftover chicken or meat. This dish consists of sweet potato, chicken, micro coriander, goats cheese, lime juice, spices, and cooked buckwheat. If you have never tried cooked buckwheat it is definitely worth it. Who knew you could multiply the number of nutrients you are getting with one simple ingredient? Microgreens are perfect for boosting the nutrients in a salad. Microgreens are edible greens, harvested with scissors less than a month after sprouting (so they are not fully grown). It is said that microgreens have a much higher concentration of nutrients than the fully grown plant, some more than others, depending on the type of microgreen.
