Avocado and Chickpea Sandwich

This sandwich is extremely easy to make and it has very few ingredients. This is a very healthy and filling lunch idea that will easily satisfy hunger. I’ve taken this for lunch when I’m in a rush and it never lets me down! I have even made it for a few friends, all of whom loved it!


Makes- 3 sandwiches Time-15 minutes


Ingredients:

  • 1 sliced avocado
  • 1 can of raw chickpeas*
  • feta cheese
  • your favourite bread
  • 1 lemon
  • salt and pepper

Instructions:

  1. Wash the chickpeas and place them in a large bowl for mashing
  2. Take a fork or a banana masher and roughly mash the chickpeas to the desired consistency.
  3. Place some chickpeas and avocado slices onto your sandwich. top them off with a drizzle of lemon some feta cheese and a sprinkle of salt and pepper

*If you run out of chickpeas or you don’t have any another option is to use hummus.
