Salads are a great dish for an appetizer, snack or even meal. This chickpea salad is not only tasty and healthy but it uses simple ingredients. This is great for a lunch when in a rush and it only takes a few minutes to make.
Time – 5 minutes
- canned chickpeas
- cherry tomatoes
- feta cheese
- salt and pepper
- lemon juice
- basil (optional)
- Simply rinse the chickpeas and place them in a bowl
- Slice the cherry tomatoes and add them to the bowl
- Top the salad with crushed feta cheese and chopped basil
- Finally, use the lemon juice to dress the salad and add a sprinkle of salt and pepper.
I make this salad constantly and never get sick of it, it is delicious nutritious and probably a favourite recipe. Not only is is easy to make but it is so easy that even kids can make it.
