Lunch In A Jar (2 New Salads)

I recently tried this amazing lunch idea….and it’s in an adorable mason jar. Being able to layer foods and see the different layers, makes this lunch so much more appealing! Because of its appeal and creative container, this is a great lunch for eating outdoors or while on the go.  The cool part about these lunches in a jar is the fact that you are not limited to any ingredients; you can make all kinds of salads, pasta, and other lunch dishes,

in one of these jars. You can even reuse small amounts of leftovers that may have been thrown otherwise

Below are two of my own salad recipes in a jar, containing some of my favourite healthy ingredients. Feel free to replace or swap out any ingredient, or even come up with a whole new recipe.  If you are looking for more salad recipes check out my  Chickpeas Salad.

*The main thing to remember is to place the dressing at the bottom, followed by heartier ingredients and then more delicate ingredients at the top. This way the top ingredients won’t be soggy or wilted. When you are ready to eat, simply turn the jar upside down to mix in the dressing!


Pasta Salad

To recreate this recipe, simply layer some kale, plain pasta, carrots, green onions, basil, and parmesan, in a jar. Use some olive oil, salt, pepper, and lemon, for a nice simple dressing. The end result is quite simple but very tasty.


 

Kale & Quinoa Salad

To make this salad, I used quinoa, kale, chicken, and avocado and then I drizzled some lime into the salad, to create a simple and flavourful dressing. As you can tell this salad is extremely easy to make and it consists of very few ingredients, all of which you can most likely find in your fridge. If you don’t have kale I recommend spinach for an equally tasty replacement.
