Sun-dried Tomato Salad

Tasty and refreshing are two words that come to mind when I make this salad. It is a very flavourful salad that will leave you feeling refreshed and energised. It is nutritious and extremely easy to make. I have been eating a lot of the same salads over and over again throughout the year and I decided to try something new and healthy to start off the year. This salad has chopped walnuts in it which I love because it gives the salad a bit of a crunch! Walnuts are actually a great replacement for croutons. You could also add pumpkin seed, which I thought of later on. I also really love this salad because there are no heavy or unhealthy dressings all there is, is lemon juice which makes the salad all the more refreshing.


Ingredients:

  • spinach
  • chopped sundried tomatoes (into small pieces)
  • goat cheese
  • quinoa
  • chopped walnuts
  • pepper
  • lemon

Instructions:

  1. Mix all ingredients together. Make sure to add the lemon last so it spreads evenly. Mix well and serve cold
