Healthy Tomato Soup & Grilled Cheese


This is by far my favourite tomato soup. I usually don’t enjoy soups but tomato soup is absolutely my favourite. It is warm and comforting like any other soup and plus it is packed with flavour. The mix of herbs and vegetables make the soup smell and taste amazing! I love this soup because it is not only tasty and healthy but it takes such little effort to make. All you have to do is run it through the blender and heat it up. The end result is nice and creamy so it’s super easy to eat.

This soup pares perfectly with grilled cheese. Grilled cheese and tomato soup are a common pairing because the flavours go so well together. To make this grilled cheese I used rye bread with Monterey jack cheese and some pesto sauce. I also topped the soup with some cilantro, a sprinkle of parmesan and some pepper. YUM!

Serves-5                                                        Time-20 minutes


  • 2 cups  water
  • 3/4 of a 796ml  can diced tomatoes
  • 1 handful of cherry tomatoes or any other fresh tomatoes
  • 1 handful baby carrots
  •  1/4 cup sun-dried tomatoes
  • 2 tablespoons red onion
  • 2 garlic clove, peeled
  • 1/2  teaspoon dried thyme
  • 1 teaspoon dried Italian spice
  • 1/2 vegetable bouillon cube
  • 1/2 teaspoon ground flax seed
  • 1/2 cup whole milk


  1. Blend all ingredients in a blender until smooth**
  2. Pour mixture into a sauce pan and heat on medium-low (stir occasionally) for about 5 minutes or until it has reached the desired temperature. (do not boil this may scorch the soup)

    Try substituting a ripe banana (yes banana) instead of sun-dried tomatoes for a different kind of sweetness. It’s a secret ingrediant for tomato soup.
