No Bake Granola Bites

Granola BitesThese have got to be the perfect snack! They will satisfy your sweet tooth, but they will fill you up at the same time. No Bake Granola Bites are packed with protein and healthy ingredients. I was surprised at how well they turned out. It was almost too good to be true. Just one granola bite was filling enough for a quick breakfast-to-go! The great thing is you simply have to mix the ingredients then shape them into balls. Then stick them in the fridge…and Voila! It is that simple. I made these late at night so they were ready to share in the morning! I was pleased to discover that both adults and kids can enjoy this snack that is healthy and easy to make.

Granola Bites in the making

Granola Bites...super easy snack


Makes – 20                            Time- 10 mins + overnight in the fridge


Ingredients:

  • 1 cup steel cut oats
  • 2/3 cups peanut butter
  • 1/2 cup dark chocolate chips
  • 1/4 cup ground flaxseed or chia seeds
  • 1/4 cup shredded coconut
  • 2 tbs honey
  • 2 tbs coconut oil

Instructions:

  1. Combine ingredients in a bowl and mix well
  2. Scoop out portions using an ice-cream scoop (about 2 tbsp)
  3. Using your hands, roll mixture into balls
  4. Refrigerate in a container overnight

**Do not leave out of fridge for more than 2 hours
