Take a look at your fridge and think of all the things you could throw into a salad. The possibilities are endless. This recipe is a combo of some fruits and veggies you probably have at home. TIP-This salad uses quinoa as a base which is one of the only foods that has all the amino acids making it a complete protein. Basically, it is super healthy. What I like to do is boil a bunch of quinoa and then separate it into small plastic bags. I then toss the bags into the freezer and let them freeze. Whenever I want some quinoa I simply take a bag out of the fridge and I have the perfect single portion to use in salads or other recipes.
