Healthy Gluten free Pesto Pizza

I previously made a recipe called Pita Pizza with Veggies which is one of my favorite recipes. However, I have cut down on the amount of gluten and dairy I am eating. I came up with this easy gluten free pita pizza recipe that has, even more, veggies and less dairy. The recipe also uses completely gluten free pita for the crust. Making pizza from scratch can be quite time-consuming and intimidating, but pita pizzas take only about 20 minutes total and can be made quickly in the oven or microwave.

Prebaked Gluten Free Pesto Pizza

I chose to put avocado, tomatoes, and mushrooms on my pizza but you can put whatever veggies you would like. This pizza tastes great with sundried tomatoes to replace the tomatoes. If you don’t like the veggies to be so big, you can chop them up finely in a blender or just cut them to be a bit smaller.


Makes – 2 pizzas          Time – 20 minutes


Ingredients:

  • 2 gluten free pita or flatbread
  • pesto sauce (about two tablespoons worth)
  • 1 tomatoes
  • 1 avocado
  • 2 button mushrooms
  • 2-4 leaves of basil
  • 2 tbs grated parmesan cheese
  • a pinch of black pepper

Instructions:

  1. Preheat the oven to 350°
  2. Spread about 1 tbsp of pesto onto each flatbread
  3. Slice all the tomatoes mushrooms and avocado then place enough onto the pizzas to cover all the sauce
  4. Finely slice up the basil and sprinkle onto the pizzas
  5. Place one tbsp of grated parmesan onto each pizza
  6. Put the pizzas in the oven for 15 minutes or until cheese is melted
