Who knew you could multiply the number of nutrients you are getting with one simple ingredient? Microgreens are perfect for boosting the nutrients in a salad. Microgreens are edible greens, harvested with scissors less than a month after sprouting (so they are not fully grown). It is said that microgreens have a much higher concentration of nutrients than the fully grown plant, some more than others, depending on the type of microgreen. I decided to use kale microgreens in this salad but you could also use micro broccoli, red cabbage microgreens, cilantro micros etc.

Another nutrition packed ingredient I added to this salad, is hemp hearts. I try and sprinkle these onto all of my salads because they are practically tasteless and they are full of healthy fatty acids, protein, and various minerals.

Micro Green Kale Salad 1

Ingredients:

  • kale
  • 1 teaspoon
  • micro kale
  • pecans
  • cranberries
  • pumpkin seeds
  • hemp hearts
  • balsamic vinaigrette (store-bought)

Instructions:

  1. Wash and chop up kale. Once dry massage with olive oil so it will soften and become less tough to eat
  2. Ad micro greens, pecans, cranberries, pumpkin seeds and hemp hearts.
  3. Add balsamic vinaigrette dressing before serving.
