Looking for a quick guilt free snack? This snack is absolutely perfect and it tastes really good. I was not a huge fan of zucchini until I tried these. Not only did they turn out, but they were very crispy and tasty. They were the perfect snack to eat while studying and doing work as they provide nutrients but they are also comforting to eat. I previously made a recipe called Pita Pizza with Veggies which is one of my favorite recipes. However, I have cut down on the amount of gluten and dairy I am eating. I came up with this easy gluten free pita pizza recipe that has, even more, veggies and less dairy. The recipe also uses completely gluten free pita for the crust. Making pizza from scratch can be quite time-consuming and intimidating, but pita pizzas take only about 20 minutes total and can be made quickly in the oven or microwave. Continue reading

Gluten Free Chocolate Almond Cookies

Through some experimentation with ingredients, I have come up with these super cool chocolate cookies. They are gluten free and milk free, using only simple ingredients. I also chose to use farm raised eggs for this recipe. If you can, farm raised and free range eggs are ideal for ethical reasons. You can also look for fair trade cocoa. 3 Ingredient Peanut Butter Cookies (Gluten-Free)

3 Ingredient Peanut Butter Cookies

These are my new go-to treat! They are gluten-free and they require very simple ingredients. All you need is eggs, brown sugar, and peanut butter! I chose to cut down the usual amount of sugar to make the cookies much healthier. However, this made the cookies chewy as opposed to crispy! If you want to cut down on the sugar without compromising the crunch you can add 3 tablespoons of coconut flour which will soak up a lot of moisture!
