Buckwheat for Lunch

cooked buckwheat

This is the perfect dish for those days when you are craving a warm meal. It is also a great idea to make if you have leftover chicken or meat. This dish consists of sweet potato, chicken, micro coriander, goats cheese, lime juice, spices, and cooked buckwheat. If you have never tried cooked buckwheat it is definitely worth it. I prefer buckwheat as an alternative to rice and sometimes even quinoa because it is much more hearty and I prefer the taste. Continue reading

Microgreen Kale Salad

Micro Green Kale Salad 2

Who knew you could multiply the number of nutrients you are getting with one simple ingredient? Microgreens are perfect for boosting the nutrients in a salad. Easy Gluten Free Pesto Pizza

Healthy Gluten free Pesto Pizza

I previously made a recipe called Pita Pizza with Veggies which is one of my favorite recipes. However, I have cut down on the amount of gluten and dairy I am eating. I came up with this easy gluten free pita pizza recipe that has, even more, veggies and less dairy. The recipe also uses completely gluten free pita for the crust. Making pizza from scratch can be quite time-consuming and intimidating, but pita pizzas take only about 20 minutes total and can be made quickly in the oven or microwave. Continue reading
