The other day I was craving fajitas but I don’t eat a lot of meat so I decided to make a completely vegetarian fajita. I ended up adding a bunch of other fruits and veggies and the fajita turned into more of a veggie wrap but it still tasted really good! With all the added veggies these wraps are extremely colourfull and super nutritious which is perfect for a healthy lunch. They are also easy to make. I previously made a recipe called Pita Pizza with Veggies which is one of my favorite recipes. However, I have cut down on the amount of gluten and dairy I am eating. I came up with this easy gluten free pita pizza recipe that has, even more, veggies and less dairy. The recipe also uses completely gluten free pita for the crust. Who doesn’t want a warm pizza every now and then? The only problem is store bought pizza is unhealthy and expensive while homemade pizza, is difficult to make and time-consuming! Luckily there is a third option, you can make your own pita pizza using ingredients you already have in your fridge. This will take you no more than 20 minutes and you will have the perfect sized, healthy homemade pizza. I make this all the time when I’m out of lunch ideas or I’m in a rush. for this recipe, there is no need to make your own dough and the pizzas only take 15 minutes to bake.
