These are my new go-to treat! They are gluten-free and they require very simple ingredients. All you need is eggs, brown sugar, and peanut butter! I chose to cut down the usual amount of sugar to make the cookies much healthier. However, this made the cookies chewy as opposed to crispy! If you want to cut down on the sugar without compromising the crunch you can add 3 tablespoons of coconut flour which will soak up a lot of moisture! Granola BitesThese have got to be the perfect snack! They will satisfy your sweet tooth, but they will fill you up at the same time. No Bake Granola Bites are packed with protein and healthy ingredients. I was surprised at how well they turned out. It was almost too good to be true. Just one granola bite was filling enough for a quick breakfast-to-go! The great thing is you simply have to mix the ingredients then shape them into balls. Then stick them in the fridge…and Voila! It is that simple. I made these late at night so they were ready to share in the morning! I was pleased to discover that both adults and kids can enjoy this snack that is healthy and easy to make.
