I absolutely LOVE this salad. It is flavourful, colourful, and it definitely inspired me to be healthier. Honestly, I never liked or wanted to try zucchini before, but I am glad I did. It adds a simple sweet flavour to balance out the tangy lemon, and the juicy tomatoes. This takes hardly any time to make which leaves more time to enjoy the food. All you have to do is slice up a bunch of ingredients and throw them in a bowl. Tasty and refreshing are two words that come to mind when I make this salad. It is a very flavourful salad that will leave you feeling refreshed and energised. It is nutritious and extremely easy to make. I have been eating a lot of the same salads over and over again throughout the year and I decided to try something new and healthy to start off the year. This salad has chopped walnuts in it which I love because it gives the salad a bit of a crunch! Walnuts are actually a great replacement for croutons. You could also add pumpkin seed, which I thought of later on.
